Ingredients: 45 ml white rum; 60 ml pineapple juice; 20 ml lime juice; 10 ml sugar syrup; 2 small sage leaves; 150 g ice cubes

An adult white rum cocktail with pineapple and fresh sage.

Ingredients

45 ml white rum
60 ml pineapple juice
20 ml lime juice
10 ml sugar syrup
2 small sage leaves
150 g ice cubes

Method

Gently press the sage with the syrup in a shaker.
Add the rum, juices and ice, then shake well.
Strain through a fine sieve into a chilled coupe.

Two small sage leaves give enough herbal flavour without dominating.
