Cucumber Mint Vodka Spritz

An adult vodka spritz with fresh cucumber, mint, lime and soda water.

Ingredients

• 50 ml vodka
• 50 g cucumber, chopped
• 6 mint leaves
• 20 ml lime juice
• 15 ml sugar syrup
• 80 ml soda water
• 150 g ice

Method

1. Crush the cucumber and mint with the lime juice and sugar syrup.
2. Add the vodka and half the ice, then shake until chilled.
3. Fine-strain into a tall glass over the remaining ice.
4. Add the soda water and stir gently.

Leave the cucumber skin on for a more pronounced cucumber flavour.
