Blackberry Sage Gin Fizz

An adult gin fizz with crushed blackberries, lemon and fresh sage.

Ingredients

• 50 ml gin
• 40 g blackberries
• 20 ml lemon juice
• 15 ml sugar syrup
• 2 small sage leaves
• 70 ml soda water
• 150 g ice

Method

1. Gently crush the blackberries and sage with the lemon juice and sugar syrup.
2. Add the gin and half the ice, then shake until chilled.
3. Fine-strain into a tall glass containing the remaining ice.
4. Top with soda water and stir once.

Crush the sage lightly rather than tearing it into small pieces.
